Brief history

No doubt the Mexican cuisine at its best represents the culture of Mexico. A patchwork of local traditions and imported to the mix, come to life as a new, unique, without equal in the world. There are countless recipes for Mexican food, there are some extremely complex and others with only two or three ingredients such as famous guacamole.

Although Mexican food in general keeps certain ingredients and seasonings, we find strong differences in each region and in every Mexican state, as each has its own eating habits.

In its pre-Columbian origins are undoubtedly the basis: corn, chile and fruit and vegetables in each region. Turkey breeding in the Pre-Columbian Mexico was common. The tomato, cacao, avocado, pumpkin and the nopal had their own goddess:, Chicomecóatl.
The colony brought undoubtedly the foundation of Mexican cuisine. Pork brought from Europe provided the oil of choice for the preparation of all types of food like: carnitas and chicharrón. Also brought the cows and sheep, as well as rice and wheat.

In the Independent Mexico were consolidated the culinary arts we know today. It is said that the invading U.S. troops invented here in the bread box. Argentines came, French and Italian immigrants who began to manufacture cheese, Italian and Asian immigrants who brought their customs to the country's gastronomic culture.

At the end of the twentieth century, a resurgence of tequila as the most popular drink in the country gave birth of a new movement known as Mexican haute cuisine, which responds to the new tastes of an increasingly sophisticated diner.
